More turkey leftover ideas! I contemplated another Panini, but when my P.S. (Perky Shopper/hubby) called from the grocery to discuss tortillas, I changed my direction to Mexican. We’d do turkey quesadillas with turkey and cranberries. Not really Mexican, more ‘American doing weird things with tortillas’. That genre.
I was still working on a 20 lb turkey who had some impressive breasts. This turkey could have been a porn star. I love the breast meat, my P.S. likes the dark meat. I decided to be generous this time and chop up some of both.
I spread the meat out on several flour tortillas, actually over half of each one as I planned to fold them over to grill. Now I needed cheese. A quick survey of the cheese drawer and I chose sliced Swiss. I also wanted to use Colby Jack since it was shredded, so I would make two of each kind of cheese just for a comparison thingy.
I pulled the last homemade can of cranberries out of the fridge and sliced it thin and put it over the turkey. Such a pretty color and it would be a nice pop of flavor in my unusual quesadillas.
Last I laid the slices of Swiss cheese over the cranberry slices, then folded over the tortillas.
My Panini press was heated and I laid out two of my folded quesadillas onto the grill and put the cover down on them. I didn’t oil them as I’d done that before and they get crispy and all weird. As in, cracking apart all over my fingers and clothing as I ate the quesadilla. Lesson learned.
I peeked a couple of times and removed the quesadillas to a plate after 4-5 minutes of cooking. The outsides were lightly golden and the cheese was melted inside. I cut each in half as the second set of quesadillas cooked on the Panini press.
Both turkey quesadillas done, we tasted and were happy with my wacky concoction. The cranberries melted and kept the turkey from being dry. The cheese made them a gooey bite of creamy melted goodness to compliment the turkey. I’d say this was a fast hot mess that was delicious! A keeper recipe, as my P.S. would say.
Turkey Cranberry Quesadillas
Chopped roasted turkey
Sliced cranberries (I used the canned homemade recipe)
Sliced Swiss Cheese
Flour tortillas
Panini Press
On half of the tortilla spread chopped turkey, sliced cranberries and sliced Swiss cheese. Fold other half over the top and grill on Panini press until golden brown and oozing melted cheese. Serve warm.
I don’t have a panini press … assume this could be also done in a skillet ? … sounds so good

A skillet would work. You’d need to turn it carefully. Good luck!
