There are a lot of things I like to put Fritos in, including Fritos Bars and my lettuce salads. When I put them in my salads I just throw them into a small zippered bag and bash them a bit. I do a few cups at a time so I have crunchy bits ready for salads for a few days. When I read someone used them in a corn salad I was halfway to the grocery store to get a new bag.
The recipe called for Chili Cheese Fritos and that sounded so good I had to try it ASAP! I’d never even eaten the Chili Cheese variety of Fritos. Maybe I’d even put them in one of my Fritos Fritters recipes if I liked them.
I was grocery shopping with my P.S. (Persistently Skeptical/hubby) and he was rolling his eyes a lot. I wasn’t worried, he usually eats anything and ends up liking it. Our tastes are somewhat similar. It just takes him a little longer to jump on the new food bandwagon.
P.S.’s birthday was coming up and I wanted to make something unusual. I always provide the potato salad or seafood salad for our picnics, sometimes both, but each of our kids were providing those. They’ve been perfecting their method of making my signature dishes. This was a good time for them to practice more while I got to make something new.
I’d read a few other Fritos Salad recipes and some had diced cucumbers. I liked that idea and added a chopped up cucumber in with the rest of the vegetables. I slightly tweaked the recipe I found on the Easy Peasy Pleasy blog and it was delish!
I drained the cans of corn and added them to a large bowl. I chopped up all of the veggies and placed them in the large bowl as well. I added the shredded Colby jack cheese, the cup of mayo, and covered the bowl.
I let the bowl of salad refrigerate overnight and the next day transferred it to a cooler to travel to our family party in our son’s backyard. As the buffet was being set up I mixed the salad well and placed it in two containers. I tossed half of the bag of Chili Cheese Fritos into one of the containers, mixed well, and placed it on the buffet.
We dove head first into the salad. Everyone was so interested in it, the bowl emptied fast. I had said I would mix the rest of the salad as needed but we had so many other salads and things we didn’t need the second half. I tossed it with Fritos the next day and we ate it with more grilled foods. It was excellent the second day, not having the Fritos wilted in it.
Fritos Corn Salad
2 cans corn, drained
1/2 cup chopped cucumber
1/2 cup chopped celery
1/2 cup chopped onion or green onions (I used green onions)
1/2 chopped sweet bell pepper
1 cup mayo
1 1/2 cups shredded cheese (I used shredded Colby Jack)
10 oz bag Chili Cheese Fritos
Mix together all ingredients except the Fritos. Refrigerate until ready to serve.
Stir in Fritos until well blended then serve. If not sure if all of the salad will be eaten, toss portions at a time with Fritos. Then you can toss leftovers with Fritos when eaten at a later time.
