What does a food blogger do when her 12 year old grandson comes to spend the day? She bakes cookies! M & M cookies are one of Hunter’s favorite cookies, maybe even his MOST favorite. They’re also a favorite of Grandpa Scott’s, so it was a two men, one cookie recipe kind of satisfying. And did I mention I love them too?
In a large mixing bowl I creamed the sugar, eggs, shortening and vanilla with a hand held mixer. I so rarely bake with shortening it seemed strange, but the resulting cookies are softer than those made with butter.
I whisked the dry ingredients together in a separate bowl then added them to the creamed mixture and beat them just until it was well mixed.
I stirred 3/4 of the M & Ms into the dough and was ready to make cookies.
I used my medium sized cookie scoop and made about 13 cookies per baking sheet. I put a couple more of the reserved M & Ms onto the balls and put the cookies into the oven.
I baked the cookies for 12 minutes, until they were barely beginning to brown around the edges.
But I made 40 cookies out of this single recipe. When I doubled it for the store, I got about 90 cookies. My scoop is about 2 tablespoons when I smooth each cookie off evenly with a finger. So if you make smaller cookies, your baking time will vary.
The cookies stored well in little zippered bags for snacks on the run for the catering job. When I made them recently for my P.S. they stored well in a Ziploc plastic container. They also can be frozen.
M & M Cookies
1 cup packed brown sugar
1/2 cup white sugar
1 cup shortening
1 1/2 teaspoons vanilla extract
2 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 1/2 cups candy-coated milk chocolate pieces
In a large bowl, mix sugar, eggs, shortening, and vanilla thoroughly. Add flour, salt, and baking soda to creamed mixture. Blend well. Add 3/4 cup of M&M candies.
Drop dough by teaspoonful onto cookie sheet. Slightly push a few candies on top of each dough ball with remaining candies.
Bake at 350 degrees F for 9 to 11 minutes, to your liking
5-6 dozen cookies
