We were joking about sandwiches to accompany the pork and greens crockpot soup I’ve previously posted. I suggested a chopped Spam salad. My P.S. was horrified and said Spam should only be served with eggs. I said “Challenge accepted, I can make egg salad with Spam!” I got the PHE (patented husband eyeroll). But it’s a great idea to use up any extra Easter eggs you might soon have in the fridge!
Silly P.S., I could totally imagine a spam egg salad. I would boil eggs and make egg salad, with diced Spam. I hadn’t made egg salad in years so I was kind of in the mood. It would have been fun to add mashed avocado to the salad but we didn’t have any. A quick trip to the grocery store would only produce ones that weren’t ripe yet. Oh well. No avocado this time.
I did start the eggs boiling as I began to chop the rest of the salad. I diced the can of spam finely and added it to a large bowl. I added a handful of chopped green onion and a couple tablespoons of dill pickle relish along with some of the pickle juice.
Measuring out a cup of mayo, I then added some garlic powder, horseradish and a generous amount of black pepper. I did not add any salt as the Spam is always very salty on its own. It would provide plenty of salt to the sandwich experience, I was sure.
When the eggs were boiled I set them in cold water for 10 minutes then peeled and diced them into the bowl. My eggs were slightly soft yet, I’d forgotten to time them. Not a problem, I like the way slightly soft yolks blend in with the mayo.
I stirred the salad, covered it and put it into the fridge to cool for an hour before dinner.
We had the egg salad on wheat bread for dinner with our soup. It was great! The diced Spam added chew factor to a normally mushy egg salad. It also added a nice smoky, salty touch. It was an interesting experiment that worked well. It made me curious about what other things would be fun to add to egg salad. I should check into that!
Egg Salad Spam-wiches
6 boiled eggs; finely diced
Can of Spam; finely diced
1/4 cup green onions; chopped
1 cup mayo (generous, I didn’t measure)
2 tablespoons dill pickle relish with liquid
1 teaspoon ground horseradish
1/2 teaspoon garlic powder
1/2 teaspoon black pepper
Place eggs into a saucepan and cover with cold water. Bring to a boil over medium high heat, reduce heat to medium and cook for 5 minutes. Turn burner off and let set for 10 minutes. Place under cold water and let cool another 10 minutes. Peel and dice into the bowl.
While the eggs boil, open a can of Spam and dice finely into a bowl. Dice green onions and add to the bowl. Add rest of ingredients and stir well.
Cover and refrigerate at least an hour before serving on sandwiches.
