I was looking to make a quick, simple side salad for dinner and didn’t have a large variety of vegetables on hand for once. I had thawed some roasted beets from last summer’s garden and they would be the star vegetable. I also had a lime to use. My simple salad was starting to sound a tiny bit more complicated, and delicious!
I use iceberg lettuce, I like crunch in my salads. Other lettuces could be used in the salad, depending on your own tastes. Mine goes for the crunch. I chopped enough lettuce to make two salads and put it into two salad bowls.
I added the thawed roasted beets to the bowls. I’d cubed them and roasted them last summer and then promptly forgot I had put them in the freezer. I don’t usually freeze beets but we’d had quite a few and I thought it was a good idea to save some to enjoy in the dead of winter. Or the following summer, since I forgot they were there!
Cucumber is one of my favorite salad vegetables. I don’t think it’s a salad without at least a few slices of cucumber! I had peeled the cucumber then quartered it before slicing it about 1/4″ thick. I divided the pieces between the two bowls.
I always have chopped green onion in my fridge. I pulled it out and tossed a good handful into the two bowls. Finally I came to the dressing. I had a bottle of cucumber ranch dressing from my cousin Shirley. She’d decided she didn’t like it and I said we’d try it. I drizzled some on each salad.
Finally I took my lime, rolled it around to release the juice and then cut it in half. I squeezed the half on each salad and stored the other half in a baggie for another use. As I put the lime into the fridge I noticed the bag of sunflower seeds and sprinkled a few on each salad. My salad was ready!
I have to say, the combination of three of my favorite things: beets, cucumbers and lime was a huge success! Loved the flavors! So refreshing! The crisp lettuce and firm roasted beets and cucumbers.. lovely with the creamy dressing. The acidity of the lime juice seemed to meld all of the flavors together. Such a super simple salad made me happy.
Lettuce Salad with Beets, Cucumbers and Lime Juice
2-3 cups iceberg lettuce; chopped
1 cup cucumber; peeled and cut into quarters and sliced
1 cup roasted beets; diced
1/4 cup green onion; chopped
cucumber ranch salad dressing or dressing of choice
sunflower seeds (optional)
Layer salad ingredients into two salad bowls. Drizzle with dressing of choice and half a lime. Eat immediately!
