I wanted chocolate and peanut butter and to use up a few cups of Rice Krispies that I’d found in a recent search and destroy mission in my cupboards. I searched for a recipe on Pinterest and found just the one. It would also use up a bag of mini marshmallows I’d found on my cleaning mission. It was meant to be.. until I found I already had a post on Peanut Butter Rice Krispies Bars.
But no problem, it was a different recipe! Slightly different ingredients ( no marshmallows lost their lives in the previous post) and way more peanut butter. Good enough, I would have my craving sated and use up stuff. Don’t ble win.
I spread the cereal mixture in a sprayed 9×13-in pan evenly.
When the chips were melted I stirred in the vegetable oil then spread the chocolate over the bars.
The bars are sweet and crispy and have a nice blend of peanut butter and chocolate. For the few minutes of time in making them, they are a satisfying treat!
II noted below in the recipe that they were a bit crumbly, I’d use just 5 cups of Rice Krispies next time. The blogger had also suggested using less.
Rice Krispies Bars with Peanut Butter
Rice Krispies bars with peanut butter and chocolate.
– 1/4 cup unsalted butter
– 1 10-oz bag mini marshmallows or 5 cups
– 1/2 cup peanut butter
– 6 cups Rice Krispies cereal (I suggest using 5 cups and they wouldn’t be as crumbly)
– 1 1/3 cups chocolate chips (I used a mixed bag of peanut butter and chocolate chips)
– 2 teaspoons canola oil
Grease a 9×13-in pan with butter or cooking spray.
Melt the butter, mini marshmallows and peanut butter in a saucepan over mediumheat, stirring constantly. Remove saucepan from heat and pour mixture over the Rice Krispies.
Spread the mixture into the pan using an offset spatula or your hands.
Melt the chocolate chips in a microwaveable bowl for 45 seconds; stir well. Microwave again for 30 seconds and stir again. Repeat until chips are melted and smooth. Stir in canola oil.
Spread melted chocolate over the top of the bars and let harden at room temperature (about 2 hours).
Cut into squares and store in a covered container at room temperature.
