Mexican Spaghetti

I had a wild idea… which is how most of my stranger recipes are born.  I wanted a meaty, Mexican sauce with corn tortillas cut into noodles.  I thought of it as Mexican Spaghetti, although it could also arguably be called Deconstructed Tortillas.  Let’s go with Spaghetti, as that makes it more fun.  Trust me, in North Dakota in January, when our high was -34 today, we needed to make some fun. Instead of all of the traditional dishes and side dishes for our Christmas buffet I tried quite a few new ones.  We celebrated the holiday on Christmas Day instead of Christmas Eve.  I had an extra day to prepare foods ahead of time and that was a relief.  We had several frozen turkeys in the freezer and I wanted to use one for a cozy casserole-type dish.  It would be traditional in an informal way.

I’m finally getting the last Christmas recipe posted from 2018.  Although it’s not really a recipe, it was a cute idea that worked well.  I like to do a sort of artwork crudité each year and this year was simply cherry tomatoes, fresh mozzarella, basil and black olives.  I could have served it with a balsamic drizzle but my family isn’t big on balsamic.  I took the safe route and went natural.  It was pretty, tasty and loved.
