Spaghetti Squash Chow Mein

Spaghetti squash is one of the fun vegetables.  It looks like nothing you’d expect to find lying in wait under a hard skinned, elongated, gourd-like… thing!  It tastes like squash, but looks something like strands of spaghetti.  Every time I open one up I’m amazed all over again that it contains shreds of.. vegetable!  And it’s so versatile I still have dozens of ways I want to try to make it into a dish. Pepper steak was another of our family’s favorite recipes when we were all growing up.  I loved it, even though I was not a lover of green peppers.  Later as I made it for my own family I tweaked the recipe and used sweet bell peppers.  The orange or red or yellow kind that aren’t as “green” tasting.  I know, if you like green peppers you won’t understand.  They’re just a tad bitter to me. I must add another chapter to: What To Do With Leftover Pork Roast.  The roasts have been on sale for amazingly low prices (claims my P.S.).  I’ve gotten comfortable with cooking them in the crockpot and producing moist, melt in your mouth pork goodness.  I just need to find new ways to use the leftovers since there are only two of us eating these 4-5 lb roasts!
