The temperature is down to the 60s and 70s suddenly. From record breaking heat to comfortably cool, it’s fall. Fall doesn’t last long here; winter moves in fast. Snow in October isn’t unusual. Up North we dig out our coats, boots and gloves and shrug. Life goes on, it just takes us longer to get dressed. We wear layers because it might be 70° during the day but it can drop to 30° as the sun goes down.. Continue reading
We get cravings for what they call ‘cowboy caviar’ here at the castle. It’s so full of flavor with the multitude of ingredients. I notice a different ingredient in each bite. And I’m picky about the chips I use to dip. I like the smaller round white corn chips. I don’t like having to struggle to get the loaded chip into my mouth without spilling. Chili is one of those foods I like with other foods. I like to put chili on a hot dog that has been grilled to dark perfection, then sprinkle it with cheese. Or I like to put chili on an omelet with a nice handful of cheese. It makes a serious breakfast! Then there’s adding a whole lot of shredded cheese to make a queso for tortilla chips. Chili is versatile in my castle!
