I’ve been working on reducing the contents of our freezers.  The winter weather Up North seems like a good time to thaw frozen meats and things for comfort foods.  I was in the mood for potato salad, which I posted last week.  Ribs were a natural accompaniment to the meal.  I had a fruity, boozy sauce in mind.  Pineapple and bourbon would coat and caramelize the ribs to perfection. My P.S. (Princely Spouse) and I went to Red Lobster a couple months ago and I discovered they had a side dish option of bourbon mashed sweet potatoes with candied pecans.  Oh my gosh were they good!  I took a picture with my phone to remind myself to work on a recipe.  The dish, particularly the candied pecans, needed to be a more regular dish in our castle! I loved the bourbon mashed sweet potatoes at Red Lobster so much I took a picture to remind myself to do a copycat recipe. I didn’t work on the recipe immediately, but every time I looked at pictures on my phone I remembered I still needed to work on them. Two months later, I decided to work on that recipe.
