My absolute favorite summer food is cold veggie pizza. I’m not sure what the real name of this dish is and I’m not going to research it. Although it doesn’t have a pizza crust and the vegetables are raw, not baked, it will always be cold veggie pizza in our house. It’s a 40 year tradition, a family favorite of all ages. Instead of all of the traditional dishes and side dishes for our Christmas buffet I tried quite a few new ones. We celebrated the holiday on Christmas Day instead of Christmas Eve. I had an extra day to prepare foods ahead of time and that was a relief. We had several frozen turkeys in the freezer and I wanted to use one for a cozy casserole-type dish. It would be traditional in an informal way.
We do love our potato salad in the summer. It’s great side dish when we’re grilling. And although I think I make the world’s best potato salad, we do like to change it up. A couple of years ago I added cauliflower to the potato salad. We loved it! Recently I added broccoli with equally pleasing results. Both broccoli and cauliflower are from the cabbage family and they’re delicious paired with potatoes.
