Quick Pickled Carrots

I’ve always liked carrots. As a kid we’d sneak into a neighbors huge garden, pull a few young carrots, wipe the dirt off with our hands and eat them. At 8, 9, 10 years old I ate a lot of dirt. Ham and Bean Dump Soup

The temperature is down to the 60s and 70s suddenly. From record breaking heat to comfortably cool, it’s fall. Fall doesn’t last long here; winter moves in fast. Snow in October isn’t unusual. Up North we dig out our coats, boots and gloves and shrug. Life goes on, it just takes us longer to get dressed.  We wear layers because it might be 70° during the day but it can drop to 30° as the sun goes down.. Continue reading

St Patrick’s Day is later this week and we started celebrating early in the castle. I had beef and vegetables on hand to make a pot of stew and my P.S. (Purchaser of Spirits) had a bottle of Guinness on hand. “Booze stew!” we gasped, our eyes wide in excitement. This was not our first attempt at making stew with a beer. We’d made an Oktoberfest Stew a few years ago. A German version instead of Irish. Continue reading
