Pickled Cauliflower

I’ve posted this pickled cauliflower a few years ago but it’s definitely worth a revisit. Have you seen the ridiculous prices on a small jar of pickled cauliflower in the grocery stores? Tsk tsk. It’s so incredibly easy and fast to make. Don’t pay those prices. Save your money for the good things. Scallops or steak!  You can make as little or as much as you wnt in each batch.  I stick to a head of cauliflower at a time.  I can always make it again very quickly. Continue reading

Cauliflower “Shrimp” Cocktail

I’d been wanting to revisit a post I did 6 years ago (6 years!) that transformed cauliflower into shrimp. It was so good I just couldn’t get over how much it actually tasted like shrimp.  I used almost the same recipe to boil raw shrimp for many years and this was a cheaper way to enjoy the same flavors.  It was time to enjoy it again while cauliflower was in season. Cold Veggie Pizza

My absolute favorite summer food is cold veggie pizza. I’m not sure what the real name of this dish is and I’m not going to research it. Although it doesn’t have a pizza crust and the vegetables are raw, not baked, it will always be cold veggie pizza in our house. It’s a 40 year tradition, a family favorite of all ages.  It was a very popular dish in the 80s.  At least one person brought it to every church potluck. Continue reading
