I normally make Swedish meatballs around the winter holidays but we’d just had a big meatball feed. While my daughter, son, cousin and I made our yearly lefse, I had a crockpot of meatballs and another crockpot of mashed potatoes going for our dinner break. Being a blogger around the holidays isn’t always easy. My family likes me to make their traditional favorites and since I blogged most of them the first year, I’m at a loss for posts. I solved the problem by making at least one new side dish and one new dessert every holiday. The holidays where we have large family gatherings are always the best. More people = more food! One of our family favorites for decades has been hash brown casserole. It was often a side dish on holidays, without the ham. Later we added diced ham and made it a one dish meal. Regardless, we absolutely loved it. There were never leftovers when I made this dish. In my 5 years of blogging, I’m ashamed I’ve never posted the casserole!
