We weren’t done with our fall spaghetti squash binges yet. My P.S. (Purchaser of Squash/ hubby) brought home another spaghetti squash and I went searching for recipes. I didn’t find what I wanted. I had fresh asparagus and mushrooms and some frozen sweet bell peppers I wanted to use along with some leftover rotisserie chicken breasts. Spaghetti Squash Chow Mein

Spaghetti squash is one of the fun vegetables.  It looks like nothing you’d expect to find lying in wait under a hard skinned, elongated, gourd-like… thing!  It tastes like squash, but looks something like strands of spaghetti.  Every time I open one up I’m amazed all over again that it contains shreds of.. vegetable!  And it’s so versatile I still have dozens of ways I want to try to make it into a dish. Crockpot Shredded Chicken Enchilada Casserole

When I made crockpot shredded chicken a couple of weeks ago I made a crockpot casserole with the remaining vegetables and juices.  It was the easiest meal ever!  After simmering for hours, the juices were full of flavor and I simply had to decided whether to add rice or pasta to the dish.  Rice won out. I called it an enchilada casserole since it had similar flavorings and ingredients. Continue reading
