I was going to make a traditional cucumber salad for a party that we threw to celebrate my P.S.’s birthday recently.  Someone else decided to try a new cucumber recipe so I had to find another way to use some cucumbers.  I had just bought asparagus and cobs of corn and thought they’d taste great together with some other vegetables.  I could already taste a lime vinaigrette on the vegetable salad.  I couldn’t wait! Grandma Mavis’s Scalloped Corn

I’ve mentioned I couldn’t cook anything but a fried egg when I got married.  Luckily my P.S. (Patient Spouse) had quite a bit of experience in cooking food for himself so he taught me the basics.  His mother, Grandma Mavis, had a few dishes that are still his favorite to this day.  One of them is scalloped corn.  Her recipe was the best I’ve ever had.  It was one of our holiday go-to dishes for years. My P.S. (Provider of Silly vegetables/hubby) brought home a HUGE red cabbage.  It was actually a beautiful, dark purple color and he said it may or may not be frozen.  He’d been to an outdoor market and decided to bring it home and make it his own.  I made him cut it into 4 wedges so I could find places for it in the fridge.  Then I got a cold overnight and wanted soup to soothe my soul.
