Peach Whip

I needed a gluten free dessert recently and that’s not as easy as you’d think.  I wanted to use canned peaches in some way in a sort of creamy mixture.  Pudding wasn’t an option because the boxes of pudding I had all listed barley, another no-no for people who need to avoid gluten.  I decided to throw together a mixture of cream cheese and yogurt as the creamy base for my fruit dessert.  I either got lucky or was wise.  Probably the former. Watermelon Fries with Creamy Coconut Lime Dip

I spent the day recently with my sister Linda to celebrate my birthday. I made cold veggie pizza and she made a spicy watermelon fries and dip recipe I’d been drooling over. She had to find coconut sugar for the dip , which neither of us had ever heard of. Beef pot roast isn’t one of my favorite meats.  It has to have a hook, a pop, that elevates it over the pot roast my Mom used to make.  When I found this Scandinavian recipe that uses dried fruit, cinnamon and ginger, I couldn’t wait to try it.  I would change it to a crockpot recipe and the wonderful smells would float through the castle for hours!
