Stuffles {Stuffing Waffles}

I’m nuts about stuffing. I don’t like nuts in it, I mean I adore the stuff. zing. I like lots of stuff but I like stuffing in particular. Enough already? I’m still laughing. I saw a blog where they made stuffing waffles and was completely charmed. Why did I not think of this? I’ve made cornmeal waffles and covered them in gravy and waffles covered in chili. Red Eye Gravy with Ham on Rice

I hadn’t made red eye gravy in years, and I was craving it this year after Easter.  The baked ham produced a nice cup of drippings that were calling out to be used.  I wanted bits of ham in the gravy, served over white rice.  I could imagine the flavors, the aroma while the gravy was cooking.  Yum to the third degree!  I’m finally getting around to posting it! I was craving biscuits and gravy for breakfast.  I could have just ordered it on one of our weekly Friday breakfasts out but I’m never happy with someone else’s version.  Other cooks tend to add too much black pepper to the gravy.  My mouth is so busy being annoyed by the pepper I barely taste the country sausage and creamy gravy!  I needed to make this myself.  Carla Hall’s recipe sounded like the best.
