Grilled corn seems to be my theme this summer. We’ve always loved to eat corn straight off the grill, without butter or seasonings. The simple flavor of corn is heightened by grilling and we eat it without extra calories or naughty things like salt. What is even more fun is to cut the corn off the ears and make salads, dips, soups and risotto. Once we decided to get creative with grilled corn, we found all kinds of ways to eat it! This summer we’ve bought and eaten so much sweet corn and it isn’t even in season yet Up North. Our corn fields are full but the ears aren’t fully ripened. So there’s that to look forward to, of course, but we’ll continue to enjoy corn from other areas of the country in the meantime. With the last 8 ears we bought at the grocery store I wanted to try this charred corn and zucchini salad.
This post should be called ‘The Chicken Drumsticks That Wouldn’t Thaw’. Two days after I removed the drumsticks from the freezer and placed them in the fridge, they were still icy. Ditto the third day AND the fourth! Princely Spouse said they shouldn’t be in a container with other frozen meats, they were keeping each other very cold. Once they were separated they began to thaw and Day 5 we finally were able to grill them. Continue reading
