Leftover ham is always welcome in my castle.  It’s so versatile in both hot and cold dishes that it isn’t leftover for long.  It simply depends on my mood at the time.  This day I envisioned the ham in a spread on a Kaiser bun for lunch.  I’d just cut up a fresh pineapple and it was a nice sweet and tart one.  I also had fresh baby spinach on hand that would complete my sandwich. We often eat fried rice here at the castle.  When I make rice for dinner I purposely make extra so I can make fried rice the next evening.  Once I learned to always start out with cold rice, making fried rice was a cinch.  But making it interesting, with new ingredients, prevents boredom.  This time I wanted more vegetables.  I had zucchini to use and the other vegetables were a bonus. I’m not such a fan of squash, but when my P.S. (Purchaser of Squash/ hubby) brings squash home with a hopeful look in his eyes, I cave.  I find recipes and am usually surprised that I like the finished dish.  I guess it’s not that I don’t like squash, I just resist embracing it because it seems like so much work.  Although that’s not always true either.  If I can get my P.S. to chop it up, it’s easy sailing from there on.
