One of our family favorites for decades has been hash brown casserole.  It was often a side dish on holidays, without the ham.  Later we added diced ham and made it a one dish meal.  Regardless, we absolutely loved it.  There were never leftovers when I made this dish.  In my 5 years of blogging, I’m ashamed I’ve never posted the casserole!

Crockpot Enchilada Shredded Chicken

I had a very large package of chicken breasts that I needed to use up.  I was also leaving town for a few days and leaving my P.S. to fend for himself at mealtime.  I decided a big crockpot of shredded chicken with Mexican seasonings and sauces would be versatile for meals.  He could put it on buns or serve it over rice.  It would last a few days in the fridge for quick fixes.

One day, years ago, I drove through the McDonald’s drive-thru lane with my daughter and her friend.  I was joking and asked if one of the characters they had painted on the side of the building was the Evil McCheeser.  They laughed so loud and so long I was embarrassed.  Silly mom, what do I know?  I totally thought that was one of the McDonald’s characters!
