Lemon Pasta with Ham and Black Olives

The first time I made spaghetti with a lemon sauce we were thrilled with the flavors.  I used leftover chicken, some black olives and shaved Parmesan.  It was a blending of delightful flavors that we decided we wanted to add to our pasta rotation.  Four years later, shame on us!  We haven’t had it once!  I did however have plenty of ham and wanted to simply substitute it for the chicken.  We’d have a lemony, ham pasta dish. I like to include new flavors and treats on my Christmas dessert buffet.  I try at least 2-3 new things each year.  This year I not only made the cutest mini cupcakes, I made some lemon fudge!  I’ve never thought to make a fudge with citrus flavoring, but it works well in a virtual sea of our favorite chocolate and peanut butter sweets.  And it was so easy it was ridiculous! It’s anniversary time at the castle.  My P.S. (Prince Scott) and I have been married 39 years today!  I always like when the date falls on a Saturday, imitating the day of our actual wedding.  It seems more real, if that makes sense!  This year we are spending the weekend at a lake cabin and I wanted a cake to celebrate the occasion.  I had a new cake recipe I wanted an excuse to make.  It would be a “Labor” of love.  Groan?
