Porcupine meatballs were one of my childhood favorites.  It’s hard to imagine anyone NOT liking them.  Ground Beef and rice rolled into little balls, simmered in a tomato sauce?  Check!  They were usually served over yet more rice.  I ate the dish often as a kid, served it to my own kids, then forgot about it.  What?!?  Time to return to one of the best retro dishes, a simple recipe from the 60s! Juicy Lucy Meatballs

I normally make Swedish meatballs around the winter holidays but we’d just had a big meatball feed.  While my daughter, son, cousin and I made our yearly lefse, I had a crockpot of meatballs and another crockpot of mashed potatoes going for our dinner break.  There were leftovers for a couple of days so I had my craving sated for a few months.  Time for some new meatballs for our Christmas lunch. Swedish Meatballs

We always have Swedish meatballs for Christmas Eve.  They are a tradition in our Christmas Eve buffet, along with mashed potatoes to ladle the meatballs and gravy over.  This year we were away at my Dad’s for Christmas and we went a traditional roast turkey and the trimmings route.  The ground beef and ground pork for the Swedish meatballs were tucked away in the freezer for another time.
