Swedish Meatballs

We always have Swedish meatballs for Christmas Eve.  They are a tradition in our Christmas Eve buffet, along with mashed potatoes to ladle the meatballs and gravy over.  This year we were away at my Dad’s for Christmas and we went a traditional roast turkey and the trimmings route.  The ground beef and ground pork for the Swedish meatballs were tucked away in the freezer for another time. Risotto is one of my favorite foods.  It’s a dish I learned how to make several years ago, it wasn’t something we ate when I grew up.  It takes a little time to stand and stir, add more broth, and repeat until the rice is tender but I think it’s worth every minute.  I like a regular risotto made with wine, onions, broth and Parmesan as well as a risotto garnished with spinach or squash or other vegetables.  This risotto had both spinach and squash! I was watching The Great British Bake Off awhile back.  They were making Yorkshire pudding and I was fascinated.  Actually I was surprised that some of the bakers had never made it!  Even I know how, and I’m not even British.  But it had been awhile and I started craving the pudding.  When I made a large pork roast recently it was time to use the drippings for some individually sized puddings.
