Red Eye Gravy with Ham on Rice

I hadn’t made red eye gravy in years, and I was craving it this year after Easter.  The baked ham produced a nice cup of drippings that were calling out to be used.  I wanted bits of ham in the gravy, served over white rice.  I could imagine the flavors, the aroma while the gravy was cooking.  Yum to the third degree!  I’m finally getting around to posting it! Porcupine Meatballs

Porcupine meatballs were one of my childhood favorites.  It’s hard to imagine anyone NOT liking them.  Ground Beef and rice rolled into little balls, simmered in a tomato sauce?  Check!  They were usually served over yet more rice.  I ate the dish often as a kid, served it to my own kids, then forgot about it.  What?!?  Time to return to one of the best retro dishes, a simple recipe from the 60s! Creole Jambalaya

This jambalaya recipe was created by  combining a jambalaya recipe from my dear, late friend Wanda and a jambalaya recipe from my favorite (unfairly cancelled) show, The Chew.  The recipes are both from New Orleans residents, both with a Creole influence.  The Creole version contains tomatoes.  I can’t imagine jambalaya without tomatoes and have always included them.
