Using leftover pork roast is still my quest.  This fried rice recipe came up when I did a Pinterest search for “leftover pork roast rice”.  I think Pinterest misunderstood me.  But nevertheless, it was a good choice.  I could dice the roast and it would sub for the ham.  No problem!  I was excited, I love pineapple and any dish it appears in.  Mmm the sweet tang! Leftover Ham and Pineapple Fried Rice

After I made my first spiral ham in the crockpot, I was left with deliciously glazed pineapple chunks.  We could have eaten them as is, but I wanted to save them for some special stir-fried rice.  I could imagine the flavors of the stone ground mustard, pineapple and ham fried into some rice with red bell peppers and scrambled eggs.  It sounded like a great dinner! Beef Rice a Roni {copycat recipe}

I never got to eat much Rice a Roni as a kid.  I think that’s because it came in such small boxes and with 5 kids and 2 adults, my family would have needed many boxes to fill us up.  So when I was visiting friends’ houses and got to eat Rice a Roni, it was a treat!  I’ve only tried the version with ground beef and that is what I wanted to try to replicate.  This recipe came close, with a few modifications.  Or as close as I can remember.
