This jambalaya recipe was created by  combining a jambalaya recipe from my dear, late friend Wanda and a jambalaya recipe from my favorite (unfairly cancelled) show, The Chew.  The recipes are both from New Orleans residents, both with a Creole influence.  The Creole version contains tomatoes.  I can’t imagine jambalaya without tomatoes and have always included them. Another family favorite growing up was mock chow mein casserole. Even back then I wondered at the name. Besides the obvious chow mein noodles, it was nothing like the chow mein we had out of cans. I hadn’t planned a meal, and I didn’t want to go out to dinner.  I had just enough energy and interest to throw some contents of the fridge and a few from the cupboard into a skillet and call it a meal.  I’d use the small container of beef stewing meat I’d thawed several days earlier for another dish. Since that dish didn’t happen, it was going to be repurposed into a Mexican  dish ala one of our favorite shows, “Chopped”. Continue reading
