Warm Asparagus Orange Salad

The most interesting dishes are often created from bits and pieces from the fridge that need to be eaten.  I had some lovely asparagus and “pink” oranges and my thought was to make a warm salad.  I could imagine the slightly crispy asparagus coated with an orange sauce and tossed with freshly sliced pieces of orange.  I also had lemon, but the orange flavor was calling to me. Tuna Macaroni Salad

I haven’t posted my go-to tuna macaroni salad!  I’ve posted a few cold salads with tuna and vegetables, but not the basic macaroni and tuna salad I like to throw together.  During warmer weather (3 months of the year up North) we often eat the salad as a side dish with grilled meat.  I like to eat the salad as a full meal, in a bowl. When I found this recipe and read white beans, artichoke hearts and black olives on the list of salad ingredients I was eager to try it.  I was looking for something new to make as a tasty side dish to accompany our chicken burgers for dinner.  I love cold bean salads and this one promised to have a good combination of flavors.  Plus I’m always up for anything with artichoke hearts!
