I often say I make the BEST cole slaw.  And I believe I do, having spent a few years working on my master recipe that I think is a good copycat version of KFC’s cole slaw.  But this year, I was stunned when I tried a new version that rivals my own.  With pineapple!  I’d never have thought to add pineapple to cole slaw.  I think of cole slaw as a vegetable salad, not a fruit salad.  But it does work.

When I first read this recipe, oddly enough I wasn’t shocked.  I love saltine crackers and I love tomatoes.  I could see that they might make an interesting salad.  But I’m also the woman who makes toast sandwiches out of tomatoes and peanut butter. There aren’t huge differences in the warm potato salads I’ve tried.  I made a warm potato salad recently that was one of our favorites so far, yet it was different from the salad I made last week.  The main differences are in the acid used in the dressing.  They’ve often used different types of vinegar.  But the other difference is in bacon.  Some salads have bacon, some don’t.  I like the bacon versions!
