Rotisserie Chicken Tortilla Soup

Soup might not come to mind as a warm weather food but it does at our castle.  I make chicken tortilla soup and we add shredded lettuce, tomatoes, green onions, shredded cheddar and crushed tortilla chips.  It’s like having salad IN your soup!  Or you could think of it as turning a taco salad into a soup.  However you think of it, the flavors are luscious and one loaded bowl will fill your stomach. Warm Honey Dijon Potato Salad

I was finally recovering from a long bout of flu and was in the mood to cook.  My P.S. was more in the  mood to grill.  He wanted hot dogs.  I love hot dogs so I was in.  I also could finally make the warm potato salad recipe I’d been eyeing for awhile.  It had honey and Dijon and red onion and green onion and sounded like it would be an outstanding mouthful of flavor.  Dinner time! The most interesting dishes are often created from bits and pieces from the fridge that need to be eaten.  I had some lovely asparagus and “pink” oranges and my thought was to make a warm salad.  I could imagine the slightly crispy asparagus coated with an orange sauce and tossed with freshly sliced pieces of orange.  I also had lemon, but the orange flavor was calling to me.
