Chicken salad sandwiches always strike me as being complicated and taking a lot of time to prepare. They really are fairly fast and simple after all. I season the chicken breasts and throw them in a baking dish, then into the oven. I set the timer for 40 minutes and check the internal temperature when the timer buzzes. My P.S. (a bread man) brought home pita pockets and I’m always excited to see them.  There are SO many things I like to tuck inside them I almost have to flip a coin.  This time I had some bulk Italian sausage and a whole lot of leftover olives in jars (don’t ask) so a Mediterranean style pita seemed appropriate.  Did I have a recipe?  Of course not!  That wouldn’t be any fun.  Besides, I’d tweak it anyway! We were joking about sandwiches to accompany the pork and greens crockpot soup I’ve previously posted.  I suggested a chopped Spam salad.  My P.S. was horrified and said Spam should only be served with eggs.  I said “Challenge accepted, I can make egg salad with Spam!”  I got the PHE (patented husband eyeroll).  But it’s a great idea to use up any extra Easter eggs you might soon have in the fridge!
