Leftover ham is always welcome in my castle.  It’s so versatile in both hot and cold dishes that it isn’t leftover for long.  It simply depends on my mood at the time.  This day I envisioned the ham in a spread on a Kaiser bun for lunch.  I’d just cut up a fresh pineapple and it was a nice sweet and tart one.  I also had fresh baby spinach on hand that would complete my sandwich. The drafts area of my blog has been piling up as this cold/virus/flu/bug has taken away my will to be productive.  I haven’t even eaten much for almost 4 weeks.  The few things I’ve managed to make and photograph will eventually be posted and all will be right with the world again.  In the meantime I am posting a recipe I made last Sunday for my grandson’s birthday.  Casey is our Halloween child, born on October 31st! Breakfast Sandwiches by my P.S.

It’s been over a year since my P.S. has appeared on my blog!  He does cook for us occasionally here at the castle but it’s usually a  grilled chicken or steak with potatoes and a veg meal.  More often he makes us breakfast on Sundays which again is a fairly limited scope of pancakes or his favorite, French toast.  This particular morning he made us a meal of breakfast sandwiches and hash browns.  We stuffed ourselves!
