It’s been awhile since I’ve made a cabbage soup and I always meant to tinker with my recipe for Cole Slaw Soup again.  The post is regularly in the top 10 hits on the blog.  I think just the concept of using Cole slaw in soup is a quick one that deserves some variations.  I wanted to use an Italian sausage this time.  Cabbage is a good contrast to sausage so adding pickled cabbage (sauerkraut) as well might make this soup really interesting. I’ve mentioned previously how my P.S. took it into his head to challenge me to make a Reuben Lasagna. He is the corned beef fan and he was dreaming of layers of corned beef, sauerkraut and a rich Swiss cheese sauce. Since we’d had dinner out on St Pat’s Day, I made oven braised corned beef the next week. The following day the Reuben Lasagna challenge began! Continue reading

Reuben Egg Rolls would be an interesting idea if one used real, shredded corned beef. Unfortunately I used canned meat.  My P.S. (Purchaser of Stuff/hubby) bought it and I found it one afternoon when I was roaming through our crammed cupboards. I simply thought I’d use it and he’d be happy. He was, I wasn’t. Gross!
