I was craving biscuits and gravy for breakfast.  I could have just ordered it on one of our weekly Friday breakfasts out but I’m never happy with someone else’s version.  Other cooks tend to add too much black pepper to the gravy.  My mouth is so busy being annoyed by the pepper I barely taste the country sausage and creamy gravy!  I needed to make this myself.  Carla Hall’s recipe sounded like the best. I’d been toying with the idea of a sheet pan meal with sausage, cabbage and potatoes with a garlic Dijon sauce for awhile.  Having leftover cabbage from St Pat’s Day and buying fresh green beans at the grocery store was a bonus.  They all sounded like they could jump into the pan together and be friends.  The sauce would be the zingy bonus that tied them all together. When one finds bangers, which isn’t an easy task up North where we are all Norwegian or German for the most part, one must make an Irish dish to celebrate St Pat’s day.  Besides bangers and mash which come to mind, I wasn’t sure what to stick my sausages in.  Pinterest to the rescue!  A Dublin Coddle sounded like a nice way to roast up a pot of Irish comfort food!
