It was clean out the fridge night.  I’d already used up many vegetables and I had a box of baby spinach that needed to be used asap.  Obviously I could have simply sautéed the spinach in some garlic and butter but I wanted something fun to go along with our walleye dinner.  I wondered if I could successfully add spinach to mashed potatoes and discovered several recipes that looked promising.  The one with both Parmesan and cheddar cheese looked like the best idea. I make so much guacamole I’m sort of tired of it.  As much as I love avocados, there must be other ways to use it.  I’ve made a few other dishes using avocados but I really wanted to try another dip.  Just not with the other guac things in it.  There must be many other flavors that would mesh with avocados besides spicy peppers and tomatoes and lime, I speculated. When I was writing the post for Rice Goulash, my mind wandered back to more of the kids’ favorite dishes when they were growing up.  Beef goulash, made using ground beef with a mushroom soup gravy had to be served with egg noodles.  There were rarely any leftovers on beef stroganoff nights!  I looked for an actual recipe online and found one at Betty Crocker and was ready to cook!
