Creamy Spinach Pasta with Ham or Shrimp

I was yearning for something creamy and rich for dinner.  I wanted pasta with a creamy sauce full of spinach and shrimp. I would use my go-to recipe for a creamy sauce and add spinach at the end. I would simply  separate the sauce between two skillets, add pasta and ham to one and pasta and shrimp to the other.  A good handful of Parmesan for each, with more for garnish, and my craving would be appeased. I’ve been craving chicken burgers.  The simple solution would be to stop at the nearest fast food restaurant (there’s one a block away from the castle) and get myself a chicken burger.  I hadn’t gotten around to doing that when I came across ground chicken in the grocery store.  It was ground thigh meat on code.  I picked up a package that was just over a pound.  I would make my very first chicken burgers. Risotto is one of my favorite foods.  It’s a dish I learned how to make several years ago, it wasn’t something we ate when I grew up.  It takes a little time to stand and stir, add more broth, and repeat until the rice is tender but I think it’s worth every minute.  I like a regular risotto made with wine, onions, broth and Parmesan as well as a risotto garnished with spinach or squash or other vegetables.  This risotto had both spinach and squash!
