Dried beef isn’t something I ever had as a kid. Our beef was purchased a half at a time, nothing dried. My P.S. had it as a kid, often as SOS: chopped and creamed on toast. They were military people, perhaps that was common to their culture. I loved it the first time my MIL made it for us. She sent a jar hone with us and so I had to also learn how to make gravy. My Mom found a recipe years ago and made it each year for our Christmas Eve buffet.  We’d open our gifts then take a break and enjoy a wide array of finger foods and of course sweets.  My Mom was and still is an excellent cook.  Her holidays and parties are legendary.  When I had my own family, I had to call home for recipes.  The internet didn’t exist and letters just weren’t fast enough.  I needed access to Mom recipes! Leftover ham is always welcome in my castle.  It’s so versatile in both hot and cold dishes that it isn’t leftover for long.  It simply depends on my mood at the time.  This day I envisioned the ham in a spread on a Kaiser bun for lunch.  I’d just cut up a fresh pineapple and it was a nice sweet and tart one.  I also had fresh baby spinach on hand that would complete my sandwich.
