Tortilla soup is a castle favorite. We like it with chicken and like to add lots of chopped things as garnish. It’s almost more of a salad by the time we’re finished. Chopped lettuce, tomatoes, green onions, avocados, shredded. cheese and crushed tortilla chips really can fill a bowl! And a tummy! I’m continually adapting recipes for tortilla soup. Mexican Spaghetti
I had a wild idea… which is how most of my stranger recipes are born. I wanted a meaty, Mexican sauce with corn tortillas cut into noodles. I thought of it as Mexican Spaghetti, although it could also arguably be called Deconstructed Tortillas. Let’s go with Spaghetti, as that makes it more fun. Rotisserie Chicken Tortilla Soup
Soup might not come to mind as a warm weather food but it does at our castle. I make chicken tortilla soup and we add shredded lettuce, tomatoes, green onions, shredded cheddar and crushed tortilla chips. It’s like having salad IN your soup!
