My life hasn’t changed drastically due to our social distancing. I still babysit my grandkids 3 days a week at my son’s house. Instead of hanging out with the two little guys, aged 2 and 5, the other 3 grands aged 9, 12 and 16 are also home. They sleep later and feed themselves so it’s not so very different. This will be our new routine for the next six months.
I was looking forward to these gingerbread cookie bars with cream cheese frosting. Then I made them and used double the butter! I don’t know why I used two sticks of butter (1 cup) instead of one stick. I realized it right after I put the pan into the oven. I let the bars bake while I made up a new batch in a new pan. The extra buttery bars were done just as the second pan was ready to go into the oven. Continue reading
My favorite pie is a pecan pie. I don’t often make it because everyone requests pumpkin or apple pies and you can just make so many pies. It’s the laziness factor. Apparently laziness wins out over my love of pecan pie in my world. But this year I wanted bourbon pecan pie and I decided to make it in bar form.
