Gingerbread Cookie Bars

I was looking forward to these gingerbread cookie bars with cream cheese frosting.  Then I made them and used double the butter!  I don’t know why I used two sticks of butter (1 cup) instead of one stick.  I realized it right after I put the pan into the oven.  I let the bars bake while I made up a new batch in a new pan.  The extra buttery bars were done just as the second pan was ready to go into the oven. My favorite pie is a pecan pie.  I don’t often make it because everyone requests pumpkin or apple pies and you can just make so many pies.  It’s the laziness factor.  Apparently laziness wins out over my love of pecan pie in my world.  But this year I wanted bourbon pecan pie and I decided to make it in bar form.  I have an excellent pecan pie bars recipe I’ve never shared! Special K bars are one of our family favorites.  They are so easy to make I have the recipe memorized!  When I saw this recipe for pretty much the same bars, using Chex cereal, I was curious.  I wondered what the larger pieces of cereal would do to the flavors of the bars.  And with more chips and peanut butter in the frosting, how would that change our traditional bars?  I bought Chex to find out!
