Simple White Bean Soup

My Dad loves to make soup with ham shank and beans.  I also like to make bean soup but I don’t use the same spices.  In fact I used very few for this soup and it was delicious.  I only used a little garlic powder, salt and pepper and the ham flavor came through  very well.  The vegetables add a nice layer of flavor of course but this is ham and bean soup at its simplest. When I found this recipe and read white beans, artichoke hearts and black olives on the list of salad ingredients I was eager to try it.  I was looking for something new to make as a tasty side dish to accompany our chicken burgers for dinner.  I love cold bean salads and this one promised to have a good combination of flavors.  Plus I’m always up for anything with artichoke hearts! I had another ham bone to use, courtesy of the crockpot spiral ham I made before Easter. When I’d made my last pot of bean soup I brought some to my Dad. He mentioned using cloves for seasoning. I was intrigued. He said to add the whole cloves from the start so they soften and are edible later in the soup. I liked the idea of clove seasoning in the soup and couldn’t wait to have a ham bone to make more bean soup! Continue reading
