Salisbury steak was in the air.  It seemed like everywhere I turned one week someone was posting a Salisbury steak recipe.  I’d recently made Swiss steak, a fond memory of my childhood and Salisbury steak also fit into that category.  Again, as I mentioned in the Swiss steak post, I was mostly all about the gravy.  I liked to put it on white bread.  Yes, a carb nightmare.  I’ve grown up since then. Swiss Steak

I love Swiss steak.  It reminds me of back when my Mom made it in our big electric frying pan.  I don’t think crockpots were invented yet.  But she  made a big batch of Swiss steak in that frying pan on the counter and I loved the gravy.  I wasn’t a big meat-eater even back then; I was all about the gravy and mashed potatoes.  Weight problem?  Um, yes.  I did eat most vegetables, in my defense. Cheesy Tater Tot Hotdish

We were so happy with the tater tot hotdish I made recently that we wanted more.  My P.S. suggested using cheddar cheese soup instead of the cream of celery and cream of mushroom soups called for in the recipe.  Sounded great to me!  I stopped at the grocery store on the way home and bought the soups.  I’d make it that night for dinner and we’d also have leftovers to microwave during the busy week ahead.
