Cheesy Tater Tot Hotdish

We were so happy with the tater tot hotdish I made recently that we wanted more.  My P.S. suggested using cheddar cheese soup instead of the cream of celery and cream of mushroom soups called for in the recipe.  Sounded great to me!  I stopped at the grocery store on the way home and bought the soups.  I’d make it that night for dinner and we’d also have leftovers to microwave during the busy week ahead. When I saw this recipe I laughed.  It struck me as humorous to stuff a cauliflower with a meatloaf mixture and bake it.  It sounded funny AND fun!  The recipe was meant to happen when cauliflower went on sale last week.  Fate.  My cousin Shirley was joining us for dinner so it would be company food, too.  Slightly better than one of our usual “throw it together” meals.  One for the blog! Treasure Meatloaf by Kitty Bell was one of the first recipes I ever collected.  I was 16 and as part of our church youth group (aka Luther League) we had monthly dinners with our church youth coordinator, Kitty Bell.  She made us a meatloaf dinner which we ate before going to see ‘Jesus Christ Superstar’.  I thought the meatloaf was almost as amazing as Jesus in the movie.  I had a crush on Jesus Ted Neeley for years.
