I had a very large zucchini and wanted to be sure to use it in several ways while it was still fresh.  I was discussing it with my P.S. (Princely Spouse) who suggested there must be a way to combine the zucchini with blueberries in a breakfast baked good.  I thought coffee cake or muffins would be a great idea.  I found the recipe for zucchini oatmeal muffins that suggested adding banana, and said no, I’ll add blueberries! It had been awhile since we had bananas that were so ripe they were screaming “make banana bread”!  I actually went searching in the stores for ripe bananas and hit the jackpot at the second store.  I had visions of bran banana muffins, blueberry banana muffins, carrot, zucchini banana muffins, etc.  You can tell I was trolling my Pinterest account!  I was out of milk for the bran version so next up was blueberries.  Those I had plenty of courtesy of my blueberry pickin’ P.S. I know, even my P.S. (Partner in Sustenance/ hubby) rolled his eyes when I told him about my new recipe find.  But really, mushrooms and blueberries are both found in the woods.  The blog where I found the recipe said it is common in northern Italy to pair the two in food dishes.  The risotto is a popular dish and usually made with beef broth.  If Italians love it, why shouldn’t we?  I have an open mind!
