We spent Christmas in Minnesota with my dad.  He watches what he eats and refuses to eat white foods for the most part.  We’d planned to roast a turkey and I wanted a new vegetable side dish since we were skipping mashed potatoes.  When I ran across the recipe for roasted Brussels sprouts and butternut squash on a blog I was intrigued.  I showed it to my P.S. and he said “Make it!”  It was a done deal. Risotto is one of my favorite foods.  It’s a dish I learned how to make several years ago, it wasn’t something we ate when I grew up.  It takes a little time to stand and stir, add more broth, and repeat until the rice is tender but I think it’s worth every minute.  I like a regular risotto made with wine, onions, broth and Parmesan as well as a risotto garnished with spinach or squash or other vegetables.  This risotto had both spinach and squash! My P.S. (Provider of Squash/hubby) brought home a HUGE butternut squash from the farmer’s market.  To be fair, he did call ahead and ask me if I wanted to take one on.  I agreed.  Squash is easy to use, it’s so versatile.  My P.S. was in the mood for squash soup.  I was in the mood for squash gratin.  The 7-8 lb squash he brought home would accommodate both dishes and more.
