I want to squash some rumors. Hehe.. just being silly. This time of year I end up with lots of squash from various sources and have to be creative. We’ve had a very busy summer and cooking at home has been sadly lacking. I could tell you the menu at almost every restaurant in town but not the contents of my freezer! In fact I was digging through that freezer a few days ago to find things to thaw and eat. I was determined to reduce the meat clutter in there so I could buy boxes of Outshine Fruit Bars, which were on sale. Truth!
My favorite way to eat cauliflower is simply mashed with potatoes and butter. Close behind would be cauliflower in a salad with black olives, tomatoes and a zesty vinaigrette. This Mediterranean chopped salad recipe was good but I had to do a few substitutions and tweaks. I added carrots and subbed orzo for Israeli couscous. I omitted the feta as I didn’t have any on hand.
