Mediterranean Chopped Salad

My favorite way to eat cauliflower is simply mashed with potatoes and butter.  Close behind would be cauliflower in a salad with black olives, tomatoes and a zesty vinaigrette.  This Mediterranean chopped salad recipe was good but I had to do a few substitutions and tweaks.  I added carrots and subbed orzo for Israeli couscous.  I omitted the feta as I didn’t have any on hand. When I saw this recipe I laughed.  It struck me as humorous to stuff a cauliflower with a meatloaf mixture and bake it.  It sounded funny AND fun!  The recipe was meant to happen when cauliflower went on sale last week.  Fate.  My cousin Shirley was joining us for dinner so it would be company food, too.  Slightly better than one of our usual “throw it together” meals.  One for the blog! I had a large head of cauliflower and wanted to make another cauliflower mash but we’d had that recently.  I might be obsessed with that dish but my P.S. is not.  In the back of my mind I remembered the pickled beets I’d made with a quick pickle recipe last summer and wondered if I could pickle cauliflower as well.  Just a quick pickling, overnight, should work for cauliflower too.  They would be a nice, chilled side dish!
