I’ve posted this pickled cauliflower a few years ago but it’s definitely worth a revisit. Have you seen the ridiculous prices on a small jar of pickled cauliflower in the grocery stores? Tsk tsk. It’s so incredibly easy and fast to make. Don’t pay those prices. Save your money for the good things. Scallops or steak! You can make as little or as much as you wnt in each batch. I’d been wanting to revisit a post I did 6 years ago (6 years!) that transformed cauliflower into shrimp. It was so good I just couldn’t get over how much it actually tasted like shrimp. It was a dark and stormy night… no, really it was. There was a lot of wind, blowing snow, and I was not in the mood to dine out with my P.S. (Personal Shopper/ hubby). I had a head of cauliflower that needed to be used and a desire for soup. But I was lazy so I searched the freezer for packets of frozen diced peppers and celery. Half of my work was done!
