Cheesy Tradition

Every year during the Christmas holidays there’s a tradition in our castle. It involves Kraft Roka Blue, a cheese spread that cones in a little glass jar. I’ve previously posted the cheeseball recipe and how Kraft does not always make the spread widely available. It’s seasonal, but not always available in our area. I was looking for a way to use chicken breasts and some leftover rice. I also had leftover corn tortillas and I thought of trying a dish similar to my Mexican Bowl I make with beef. I could use a variety of ingredients to bring together a bowl of enchilada goodness. It would also be similar to my Mexican Lasagna that I make with either beef or chicken. Being a blogger around the holidays isn’t always easy.  My family likes me to make their traditional favorites and since I blogged most of them the first year, I’m at a loss for posts.  I solved the problem by making at least one new side dish and one new dessert every holiday.  The holidays where we have large family gatherings are always the best.  More people = more food!
