My life hasn’t changed drastically due to our social distancing. I still babysit my grandkids 3 days a week at my son’s house. Instead of hanging out with the two little guys, aged 2 and 5, the other 3 grands aged 9, 12 and 16 are also home. They sleep later and feed themselves so it’s not so very different. This will be our new routine for the next six months.
I love making chicken salad with fruit for sandwiches. Grapes are more of a traditional fruit but I’ve used many others. The other day I added blackberries and cherries to the chicken salad and wow, was that delicious! Blackberries tend to be so seedy I avoid them but I was in the mood for a tasty berry and bought some the other day. The berries really made the chicken salad pop! Continue reading
I’ve been wanting to make cookie cups out of sugar cookie dough for a few years and this year was time to make them! I bought a roll of sugar cookie dough and set to work. First mistake: I bought a 30 oz roll of dough instead of the 16.5 oz roll the recipe required. Oops! I noticed early enough so I redid the first few balls and continued from there.
