Chewy Brown Sugar Brown Ale Cookies

These cookies were expensive!  Let’s start with the fact that the recipe called for 1/3 cup American brown ale, which I don’t drink.  I’m not even a beer person, so these cookies were a treat for my P.S. (Princely Spouse).  Then when we stopped at the liquor store to buy ale, I could only get it in a 6 pack, for $11.99.  That’s a bit crazy for 12 cookies. I’d have tripled the recipe had I known.

Peppermint Snowball Cookies

I made two kinds of snowball cookies this past Christmas: a pistachio one that ended up being a deflated snowball and this one, that was a lovely pink peppermint snowball.  I was surprised by the amount of red coloring I had to add to achieve the rosy color but they tasted heavenly.  The peppermint chunks by Ghirardelli and the bit of extract provided plenty of flavor. Andes mints are associated in my mind with restaurants.  I love when they give them as after dinner mints along with the bill.  When I saw this recipe I wanted to try them.  But I did make one mistake.  I bought a 4.7 oz box of Andes Mints rather than the 10 oz box the recipe called for.  Later, after I’d chopped them, and saw the pile of mint pieces I thought they looked like enough bits.
