Pineapple Cranberry Coleslaw

I often say I make the BEST cole slaw.  And I believe I do, having spent a few years working on my master recipe that I think is a good copycat version of KFC’s cole slaw.  But this year, I was stunned when I tried a new version that rivals my own.  With pineapple!  I’d never have thought to add pineapple to cole slaw.  I think of cole slaw as a vegetable salad, not a fruit salad.  But it does work.

We spent Christmas in Minnesota with my dad.  He watches what he eats and refuses to eat white foods for the most part.  We’d planned to roast a turkey and I wanted a new vegetable side dish since we were skipping mashed potatoes.  When I ran across the recipe for roasted Brussels sprouts and butternut squash on a blog I was intrigued.  I showed it to my P.S. and he said “Make it!”  It was a done deal. My P.S. wanted us to try a new cheeseball recipe during the holidays.  I was so happy to finally return to my Mom’s Cheeseball Recipe since Kraft now makes Roka Blue in jars again.  I didn’t want to change recipes yet!  I thought it over and decided I could use the same recipe and add stuff.  Maybe some herbs or vegetables?  I thought about it for a few days then I struck gold.
