Pork, Butternut Squash and Black Bean Soup

My P.S. (Princely Spouse) suggested I make more pumpkin soups, as he laid another pile of cans of pumpkin on me.  I’d just asked him “what is it you crave that we now have a dozen cans of pumpkin?”  Soup was a good answer.  I was thinking more along the lines of pie…  But the subject of soup did remind me I had roasted a butternut squash and froze it to make future soup.  It was time for the future. White Bean and Ham Hock Soup

Bean soup makes me of my Dad, who loves to make a pot of bean soup.  I was talking to him recently and mentioned I was making bean soup.  He had several questions and sounded very interested.  I made a note to set aside some cups in the freezer to take to him my next visit.  Maybe that’s what made this soup so good; knowing that my Dad would be judging it.  It turned out so good even my P.S. is still raving about it! I’ve put off jumping on the instant pot bandwagon as it’s actually too slow for us.  When we come home at 5 or 6 pm and my P.S. has to be in bed by 7 pm due to his work schedule, we don’t often have an hour to wait.  But 5-8 hours in a crockpot started earlier in the day works very well.  A quick side salad or some steamed vegetables and we have a instant meal using a crockpot.
