Peach Whip

I needed a gluten free dessert recently and that’s not as easy as you’d think.  I wanted to use canned peaches in some way in a sort of creamy mixture.  Pudding wasn’t an option because the boxes of pudding I had all listed barley, another no-no for people who need to avoid gluten.  I decided to throw together a mixture of cream cheese and yogurt as the creamy base for my fruit dessert.  I either got lucky or was wise.  Probably the former. I get to babysit my grandkids several days a week but recently got to spend a whole weekend with them.  My son and his wife spent a much needed long weekend in Duluth, to celebrate 17 years of marriage.  I got custody of the 5 grandkids, aged 2 years to 16 years!  This granny likes to cook so I consulted with the young’uns about what foods they wanted to eat all weekend.  Of course I hoped one or two of the meals would end up being blog worthy! After making 3 pound cakes from a new recipe, of course I had to make trifle.  It’s a family favorite and my P.S. had a birthday coming up.  We were having a party over Memorial Day to celebrate another year in the life of my Princely Spouse and he really, really likes trifle!  Pound cake being our version of sponge cake, I had enough to make a large trifle with two of the cakes.
