Dried beef isn’t something I ever had as a kid. Our beef was purchased a half at a time, nothing dried. My P.S. had it as a kid, often as SOS: chopped and creamed on toast. They were military people, perhaps that was common to their culture. I loved it the first time my MIL made it for us. She sent a jar hone with us and so I had to also learn how to make gravy. Watermelon Fries with Creamy Coconut Lime Dip

I spent the day recently with my sister Linda to celebrate my birthday. I made cold veggie pizza and she made a spicy watermelon fries and dip recipe I’d been drooling over. She had to find coconut sugar for the dip , which neither of us had ever heard of. Normally I wouldn’t use a weight watchers recipe. I’m not a follower- I have more success simply counting calories on an app. But cucumbers are my world!  I eat them in almost any way, shape or form. This caviar sounded good.  It had all of the ingredients and flavors of guacamole, minus the avocados, add the cucumbers. It’s probably more correctly called a salsa but that’s just semantics.
