Do you ever look in the freezer and realize you’re falling down on the job?  I will freeze meats such as leftover pulled pork or roasted turkey and promise myself to use it up in a week or two.  Yeah, that rarely happens.  Eventually I take a month and seriously work on reducing my leftovers.  Having turkey breast leftover is good in many dishes.  This day I decided on some soup. I spent several days in February with my sister, Linda, during the state wrestling tournament.  My nephew, Jesse, took the state title for the third year in a row in his weight and we were very proud.  Linda threw a party for Jesse’s team and friends to celebrate and that’s where I came in.  I’m her caterer.  She’s bossy that way.  Joking!  One of the foods was a giant electric roaster of knoephla soup, Jesse’s favorite. I haven’t made split pea soup in AGES.  I saw ham hocks in the grocery store and the soup popped into my mind.  A bowl full of wintery deliciousness was my next challenge.  Plus I wanted to add dumplings like my mother used to when we were kids.  I’m not sure why but pea soup seems naked now without dumplings.
