I had a very large package of chicken breasts that I needed to use up. I was also leaving town for a few days and leaving my P.S. to fend for himself at mealtime. I decided a big crockpot of shredded chicken with Mexican seasonings and sauces would be versatile for meals. He could put it on buns or serve it over rice. It would last a few days in the fridge for quick fixes.

Chicken Fajita Subs
We’ve eaten quite a few subs in the last few months. They’re quick to make or easy to pick up at Subway’s drive-thru (guilty look). I recently posted the Subizza subs I made for the grandkids that were such a hit. Last week my sub tendencies shifted in a fajita direction. Crockpot Chicken Fajitas {better than Facebook}
There was a recipe floating around Facebook one week on how to make chicken fajitas in a crockpot. It was ridiculously easy, I’m not sure why anyone would need a recipe. Perhaps a recipe for the fajita seasoning, as buying the packets full of salt and additives is ghastly.
