I wanted to make fudge but didn’t have a jar of marshmallow fluff. I don’t usually buy it until I’m going to actually make fudge. I like to include new flavors and treats on my Christmas dessert buffet.  I try at least 2-3 new things each year.  This year I not only made the cutest mini cupcakes, I made some lemon fudge!  I’ve never thought to make a fudge with citrus flavoring, but it works well in a virtual sea of our favorite chocolate and peanut butter sweets.  And it was so easy it was ridiculous! My mother made the best fudge, ever.  She made it every Christmas and once I had my own home I made it every year myself.  It’s a very large recipe but disappears fast enough with all of the family gatherings and sending home care packages.  I’m not sure why I stopped making it a few years ago but this year it was reborn.  It needed to appear again in my castle!
