10 Minute White Bean Soup

I’d been wanting to try this 10 minute soup for months but never had spinach on hand when I thought of making it.  And I thought a little ham added to the soup couldn’t be a bad thing.  Ham, beans, they’re a good pairing.  So finally I had all of the ingredients.  I even had fresh parsley, which is rare.  The soup was perfect for  a cool fall day begging for a hearty bowl of soup for dinner. Ham and Bean Dump Soup

The temperature is down to the 60s and 70s suddenly. From record breaking heat to comfortably cool, it’s fall. Fall doesn’t last long here; winter moves in fast. Snow in October isn’t unusual. Up North we dig out our coats, boots and gloves and shrug. Life goes on, it just takes us longer to get dressed.  We wear layers because it might be 70° during the day but it can drop to 30° as the sun goes down.. Continue reading

Red Eye Gravy with Ham on Rice

I hadn’t made red eye gravy in years, and I was craving it this year after Easter.  The baked ham produced a nice cup of drippings that were calling out to be used.  I wanted bits of ham in the gravy, served over white rice.  I could imagine the flavors, the aroma while the gravy was cooking.  Yum to the third degree!  I’m finally getting around to posting it!
