I had another ham bone to use, courtesy of the crockpot spiral ham I made before Easter. When I’d made my last pot of bean soup I brought some to my Dad. He mentioned using cloves for seasoning. I was intrigued. He said to add the whole cloves from the start so they soften and are edible later in the soup. I liked the idea of clove seasoning in the soup and couldn’t wait to have a ham bone to make more bean soup! Continue reading

Creamy Ham and Mushroom Casserole

I pulled the heel from our last ham out of the freezer the other day.  I cut the ham into pieces, removing the grizzly bits and fat and setting them aside for bone broth.  I ended up with 3 cups of beautifully diced ham to play with.  I’d been in the mood for a creamy pasta dish.  Ham would work well with the baby bella mushrooms I also had on hand.  Add a few vegetables and we’d have dinner. Leftover Ham and Pineapple Fried Rice

After I made my first spiral ham in the crockpot, I was left with deliciously glazed pineapple chunks.  We could have eaten them as is, but I wanted to save them for some special stir-fried rice.  I could imagine the flavors of the stone ground mustard, pineapple and ham fried into some rice with red bell peppers and scrambled eggs.  It sounded like a great dinner!
